Posole Verde (Vegano!)

Having grown up in the Southwest, I've always been a pretty big fan of Tex-Mex dishes. This vegan pozole is a great option year-round as it's just as good served warm as it is chilled, it's full of flavors, and equal parts comforting and fresh. Another great feature? This can be made on the stovetop or in a slow cooker! Anyone who has experience in instant pot use could also probably figure out an option there, but I do not have that experience, and I'm sure not going to guess!

Ingredients
1 Tbsp olive oil or 0.25 cups water
1 large onion, diced
1 medium jalapeno, diced and de-seeded (unless you want that extra heat)
4 cloves garlic, minced
1 tsp oregano
1 tsp cumin
3 cups cooked beans (2 cans or ~1.5 cups soaked from dry - I usually use pinto beans, which are the obvious choice, but in the pictured batch I used navy beans because that's what I had on hand. Black beans have also been a fun twist)
1 can hominy (25 - 28 oz), drained
~1 lb. (or 6 medium) tomatillos, husked, rinsed of their stickiness and chopped
4 cups vegetable broth (this is a really good recipe for homemade broth, as all the other things really liven up the flavor if you choose not to spice or salt yours)
Lime juice to taste
Salt and Pepper to taste
Serving ideas
Sliced or diced avocado
Cilantro
Thinly sliced radishes
Lime wedges
Tortilla chips or strips
Other hot things!
Stovetop Instructions
In a large pot, heat the oil or water over medium. Sautee the onions until translucent, and beginning to release their juices - around 5 minutes. Add the garlic, jalapeno, cumin, and oregano, season with a bit of salt and pepper, and cook until fragrant.
Add in the beans, hominy, and tomatillos, and give them a quick stir to get them covered in the spices. Then, add in the vegetable broth and bring it all to a boil. After 30 seconds to a minute of boiling, reduce the heat, cover the pot partway with the lid, and let simmer for 20-30 minutes.
Just before serving, add the lime juice and more salt/pepper to taste. Load up into bowls and top your heart away!
Slow Cooker Instructions
Place all of the ingredients except the lime juice into the slow cooker and give a really solid couple of stirs to get everything mixed up well.
Cook on low for 6-8 hours OR high for 3-5 hours.
Just before serving, add the lime juice and more salt/pepper to taste. As above, load up into bowls and garnish with whatever toppings you've prepared.
